Description:
Ingredients: 32 ounces cream cheese
2 Cups sour cream
1 1/2 Cups Splenda
1 teaspoon vanilla extract
5 eggs
How To Prepare: Bring all ingredients to
room temperature. Oil the
bottom of a
springform pan. Combine
cream cheese, sour cream,
sugar and vanilla in mixer
bowl; beat until smooth.
Beat in eggs 1 at a time.
Spoon into
prepared springform pan;
place in a preheated 375
oven for 1 hour. When done
turn off oven and crack the
door and allow the cake to
cool for about 3
hours before removing (this
is the secret to prevent
cheesecake from
cracking). Remove from
oven and chill overnight.
NOTES : The only thing
altered about my original
recipe is the Splenda. Real
New York Cheesecake
does not have a graham
cracker crust.

Cons: none

I cannot get a Beachgirl cheesecake to come out well. Maybe it my high altitude (7300'). This is one easy cheesecake and came out GREAT. Does not call for a water bath which makes it even easier. The top came out a bit too brown and next time I plan to put a loose piece of foil over it while it cooks.

If this is a four serving recipe, OMG! It's to die for! I usually make 8-12 pieces out of it. This time I really got some air into the cream cheese/sour cream/vanilla/Splenda mixture so I had to take some out of the pan (so it wouldn't overflow). It makes a big hit at functions (family or work). Thanks MaryBeth, for posting this for us!
