Description:
Ingredients: 2 small butternut squash
(approx. 3 cups)
1/2 cup mayonnaise
2 eggs, lightly beaten


1/4 c. Splenda or Whey Low Sweetener
1/2 t. salt
1 t. pumpkin pie spice
1 t. orange extract
How To Prepare: Bake pierced squash on foil-covered pan for 1 hour at 350 or until easily pierced. Peel & seed, (scooping out any overly wet flesh) then cut into chunks. Mash with fork, then beat with mixer. Add eggs, mayo, sweetener, salt and beat 'til only very small lumps remain. Bake in greased 2 qt. casserole at 350 for 40 min. (Add 1/2 c. pecans w/ 1 T. melted butter & additional sweetener as topping if you can "afford" it!)
