Ingredients:
|
One Large Onion
One package boneless,
skinless chicken breasts
One 1 lb bag frozen veggies
(mixed or just cauliflower)
One jar low-carb pasta
sauce
Lots of grated parmesan
cheese (not Kraft in a can)
Your favorite casserole /
9x13 pan

How To Prepare:
|
Pre-heat oven to 350
degrees.
Coarsely chop the onion
and line the bottom of the
pan with it. Pound the
chicken breasts to an even
thickness to ensure even
cooking and set them on
top of the onion pieces.
Dump the bag of veggies
on top and spread them out
evenly in the pan. Pour the
whole jar of sauce on top
and cover with foil.
Bake for approximately one
hour. Pull out, remove the
foil, and cover the top with
cheese. Put back in the
oven for 10 minutes, or until
cheese is bubbly and
brown.
I put this together on a
whim one night, and it has
quickly become a favorite
for us and all who share it.
