Description:
Ingredients: 2 boneless/skinless chicken breasts
Enough pork rinds to produce 1 cup of pork rind crumbs (approx 20)
3 Tablespoons of parmesan cheelse (powdered type)
2 teaspoons ground black pepper - adjust to taste.
1 teaspoon garlic powder
oliver oil
butter
1 beaten egg
How To Prepare: In food processor pulse pork rinds until fine. Add parmesan cheese and black pepper, pulse to blend.
Cut chicken breasts in to strips. Dip chicken strips into egg mixture the coat with rind mixture. Combine equal amounts of butter and olive oil in skillet. Just enough to cover bottom of skillet. Fry 2-3 minutes per side. Dip in bleu cheese dressing for extra flavor.

wow this is good stuff. So easy to make, and so tasty, the pork rinds are a great idea, and Im going to make it again and again.

Pros: My picky husband loved it!
Cons: none

He did say it could use a bit more spice, but other than that, it got a big thumbs up from him and that's quite an accomplishment.

Pros: easy great snack
Cons:

dont overcook the chicken because it dries it out
