8 oz cream cheese, softened
small jar artichoke hearts
6 oz sliced mushrooms, raw
1 T butter
1 T olive oil
2 T crumbled blue cheese
1/4 c. diced red onion
3 strips cooked bacon
How To Prepare:
Dice artichoke hearts and onion. Saute mushrooms in oil and butter till softened and browned. Add artichokes and onion, continue to saute, adding a dash more olive oil as needed. When all is softened, stir in cream cheese, blue cheese (optional) and chopped bacon. Mix well and place in baking dish (I use 6" dia baking bowl) and place in oven 350 for 15 minutes to make sure it's warm through. Serve with locarb veggies or spread on steak. Be sure to check carb counts on artichoke hearts, I compared 4 brands and they varied greatly.
