Ingredients: 3 Lg. Eggs
2T. Atkins Bake Mix
1/2t. Cinnamon
1/4t. Nutmeg
1/4t. Splenda
1T. Heavy Cream
1T. Water
2T. Butter
Splash of Vannila
How To Prepare: I found this recipe on atkinscenter.com
but have made some changes, it was called 'Crepes with Curried Seafood Filling'. Mix all ingredients well. Making sure to get all the lumps out, til the batter is thin and smooth. Melt some of butter in fry pan of your choice, over medium heat. Add a small amount of batter, while turning the pan around to evenly coat the bottom. Cook until it is lightly browned, about 1 minute. Flip over to finish cooking other side. Yummy! Would also work without spices, Splenda, and vanilla, to use as tortilla. Cons: took a while to get the lumps out of the batter

I was craving a treat, and filled these with some vanilla cream yogurt and strawberries. Very tasty, love the cinnamon flavor.

Cons: none

if you mix it in the blender for a couple of minutes there will be no lumps!!! also make sure your pan is hot enough (medium heat is the best). i put pumpkin pie spice instead of the cinnamon and i used half & half instead of whipping cream and water.

I made these today with Carbquik instead of bake mix. I also had trouble when trying to get the lumps out with my stick blender and was too lazy to drag the big blender out so I just left them. You really didn't see them afterwards. I used my crepe pan and they came out really good. Even my 8 year old daughter had them and loved them. I filled them with ricotta blended with sour cream, vanilla and splenda. Topped with a bit of sf syrup. Really a nice treat for a Sunday breakfast! Smile
