2 lbs. ground beef
2 pkgs. of taco seasoning
1 1/2 c. of water
2 tbsp. lowest carb taco sauce
(green salsa is the best because it has no sugar. The red tends to have sugar.)
2 oz. of shredded taco cheese
6 Low carb tortillas(I use ones from the 'Tortilla Factory' now available in most grocery stores.)
Optional fixins': Shredded lettuce, tomatoes, sour cream, onions.
How To Prepare:
Brown ground beef. While ground beef is cooking, dice or shred optional ingredients as neccessary. Heat tortilla in med-hot skillet with pat of butter(optional) until golden brown; about 1 min on one side and 30 sec. on other side. Set aside. Add packets of seasoning to ground beef and one 1 1/2 cup of water. Lower heat, let simmer for 15 min. uncovered. Fill tostada with finished ground beef mixture; top with cheese and other optional ingredients. Enjoy!!!
For lower carb meal, use lettuce greens to make a taco salad and exclude the tortillas which is where most of the carbs comes from.
