Description:
Ingredients: 2 lbs lean or extra-lean ground beef.
1 lb lean ground pork
4 eggs
1 tsp salt
1 tbs pepper
250 g fresh grated romano cheese.
100 g fresh grated parmesan cheese.
6 cloves garlic (crushed).
olive oil.
How To Prepare: Combine all ingredients in a bowl (use your hands, it's fun). Fry your meatballs in olive oil. Eat hot or cold.
Number of Servings: Makes about 60 meatballs.
Carbs per serving - include all nutritional information if known: No counts, but very small amounts.
Preparation Time: 15 mins to prep, but takes a bit to cook them all.

Positive aspects of the product (pros): This recipe feeds quite a feww people.
Cons: They dried out while keeping warm in a low temp oven.

These were a hit at a gathering i had with atkids and the other plan people. I would add moisture to the recipe with a mix of Italian salad dressing and another kind of cheese.

Cons:

These were a hit at a potluck. I used sugar-free jelly and ketchup (equal parts) as a sauce.

Positive aspects of the product (pros): Yummy, Makes a LOT of meatballs, can be frozen and used later
Cons: Takes a while to fry all of them.

The first time I made these I made them for my mother's bridal shower. They were definitely a hit and I had way more than enough. They are really good. I cook them and then freeze them in batches big enough for dinner for me and my fiance. Then when I want to have them for dinner I just put them in the oven at like 350 until they are heated through. I serve them with a sauce I make out of cream cheese, heavy cream & mushrooms. They are also really good with salt and spicy ranch. Great recipe!
