Crumbled Athenos brand Feta Cheese with Basil and Tomato
Sliced black olives
Sliced scallions/green onions
How To Prepare:
Actually, any kind of feta cheese to taste will work:
Melt butter in non stick frying pan over low-medium heat (for best results--do not burn butter!). While butter is melting, beat eggs until yolks and whites are mixed, add milk or half and half--just a splash--beat eggs some more until bubbles appear.
Pour egg mixture into frying pan and let cook for about 2 to 3 minutes over low heat.
Crumble feta to taste (I like quite a lot of feta) over one half of egg mixture, add olives and scallions over same half, cook for about 5 to 10 minutes on low heat until feta softens and egg mixture becomes semi-soft. Fold other half of omelet over half with cheese, olives, scallions and cook for an additional 5 to 6 minutes over low heat. Add salt and pepper to taste.
