4 to 7 chicken breast halves, pounded to 1/4" thickness
2 scallions, thinly sliced
2" to 3" piece of ginger, thinly sliced juice of 1 lime
1/8 cup olive oil
1 tsp. kosher salt
1/8 tsp. pepper
How To Prepare:
Combine chicken, onion, ginger, juice from lime, oil, salt, and pepper. Toss and marinade about 15 minutes. Fry in butter (suppose you could use olive oil) til chicken is done - so delicious!!
