Description:
Ingredients: 3 pounds yellow summer squash, sliced
3 eggs, beaten
1/2 c. chopped onions
1/2 stick butter,divided
1 T. splenda
1 t. salt
1/2 t. pepper
1/2 c. crushed pork rinds
How To Prepare: 1. Heat oven to 375 degrees.
Grease 1and 1/2 qt. casserole.


2. Place squash in large saucepan. Cover with water.
Cook until tender. Drain thoroughly. Mash


3. Add eggs, onions, 1/2 of the butter, splenda, salt, and pepper to squash. Mix well. Pour in baking dish.


4.. Melt remaining butter. Pour over squash. Sprinkle with crushed pork rinds.


5. Bake at 375 for approx one hour or until top is browned.
