1/4 cup butter
2 onions, chopped
2 ribs celery, chopped
1 bay leaf
salt and pepper to taste
2 cups fresh peeled and chopped tomatoes or (can of tomatoes) 2 cups sliced, young okra
How To Prepare:
1. Melt butter in large saucepan. Add onions and celery. Saute' until veggies are soft.
2. Add tomatoes, okra and bay leaf. Simmer, uncovered, one hour. Season with salt and pepper. Remove bay leaf before serving.
Number of Servings:
serves 8 (freezes well)
