Ingredients: 1 pound okra
1 cup cornmeal(I use flaxmeal)

1/2 cup olive oil(or canola)
salt and freshly ground pepper
How To Prepare: 1. Rinse okra. Remove caps. Cut pods into one-half inch slices, toss with meal.

2. Heat oil on med-high heat in large heavy skillet. Fry single layer of okra about 8 to 10 mins or until golden brown on all sides. Do not overcook or okra will become too soft. Turn carefully.
Drain on paper towels. Sprinkle with salt and pepper.
Serve immediately.

Note: Fry smaller okra whole
Number of Servings: 4 to 6 servings
