1/2 cup mini carb/zero carb baking mix
approx. 1/2 cup oil
1/2 cup canned diced tomato
1 small onion, chopped
1/2 cup green bell pepper
1 stalk celery
garlic powder (to taste)
salt & pepper to taste
1-1/2 cups of sliced fresh okra
4 oz. of smoked sausage
4 boneless chicken breasts
1 lb. of shrimp, peeled and deveined
1 chicken bouillon cube
2 quarts water
How To Prepare:
Make a dark brown roux with the baking mix and oil. Be careful not to burn! (you will have to start over if you do). In a non-reactive dutch oven, brown the sausage. Remove, and add a tad more oil. Brown the okra, after it has browned (it will take a little while) then add tomato, onion, celery, bell pepper and garlic powder. Add sausage, water,bouillon cube and roux. Bring to a boil, lower heat and simmer for 45 min.- 1 hour (or until thickened). Add chicken breast, bring back to boil and cook for 5 min. Add shrimp, bring back to boil, cover and simmer approx. 10 minutes. Adjust seasoning. Non carbers can eat over rice.
