1/2 T soy sauce
1/2 T Ex. Vir. Olive Oil
1/2 T Rice Vinegar (0 carb)
1/8 c water
1/2 t garlic powder
1/2 t seasoning packet from Ramen Noodles (any flavor)
3 c shredded red cabbage
1/2 c crunched up ramen noodles
1/8 c slivered almonds (opt)
How To Prepare:
Mix together soy sauce, olive oil, vinegar, water, garlic, and seasoning. In a serving bowl, mix together cabbage, ramen and almonds. Add wet ingredients and stir till the cabbage is coated. It's best when prepared a few hours ahead of time and chilled. When you do this, don't add the ramen till you're ready to serve because you want them to stay crunchy.
You can also marinate chicken breast (or shrimp is yummy) in the wet ingredients then cook the chicken in microwave and chop up and add to salad. When doing this, you need to make a new batch of wet ingredients to add to the salad. I'm not sure how many carbs are added to the recipe when marinating the chicken.
