5 anchovy fillets
1 1/2 c (8oz) green olives
3 lbs chicken pieces
salt and pepper
2 T olive oil
4 cloves garlic minced
1/2 c dry white wine
3 T red wine vinegar
2 T water
3 T lemon juice
3 T fresh chopped parsley
How To Prepare:
Sprinkle chicken with salt and pepper. Brown over med-hi in oil. Remove and leave drippings.Chop anchovies and half the olives in processor. Saute garlic in drippings 1 min. Add wine and vinegar. Cook 2 min stirring. Add olive mix and water. Remove. Put chicken back in pan. Cover with mix. Simmer 45 min. Add the rest of the olives, lemon juice and parsley. Cook 1-2 min. Serve.
