Ingredients: 1 can bamboo shoots
1/4 cup mayonaise
2 slices swiss cheese
1 cup shredded cheese (whatever you prefer)
horseradish to taste
salt and pepper to taste
How To Prepare: Cut bamboo shoots in half lengthwise (stack them up to do this quicker). Mix with shredded cheese, mayonaise, horseradish, salt and pepper. Put in a small, greased baking dish. Top with swiss cheese slices. Bake until bubbly and brown. I do this in my toaster oven and it takes no time at all.
