Peel and slice all your vegetables into rounds. Cut the eggplant about 1/4 unch thick. Seed tomato before slicing. Cover the bottom of a large pan with olive oil or butter and bring to a medium high heat. Place eggplant round in oil to gril. When just beginning to color take out and place on papper towel to drain. Continue this process with other veggies.
When you have completed the grilling stage, begin stacking you vegetables in this order in a greased pan...eggplant on bottom, tomato, grilled onion slice, eggplant on top. You amy make as many layers ans you like. When you have finished layering all ingredients, cover with cheddar cheese and bake in 350 degree oven til cheese is melted and bubbly.

Grilling all the vegetables is a bit of a pain
I served this dish as an appetizer, and it went over big! I added a layer of sliced, sauteed mushrooms. It would be easy to expand on the theme by using various cheeses & vegetables and by adding herbs or spices. I'll bet that a layer of spinach or other greens would be great.
