1 head of cauliflower, broken into pieces, about 7-8 cups
1/2 c. crushed pork rinds
1 and 1/2 t. salt, divided
1 cup heavy cream
1 T. butter
How To Prepare:
Place cauliflower in a saucepan;add 1 inch of water and 1 t. salt. Bring to a boil. Reduce heat. Cover and simmer for 6-7 mins or until crisp-tender;drain.
Greas a 2 qt. baking dish, sprinkle with 2T.of crushed pork rinds. Add cauliflower Pour cream over top. Dot with butter,sprinkling with remaining salt and crushed rinds. Bake, uncovered, at 350 degrees for 20-30 minutes or until cauliflower is tender.
