1/2 lb boneless chicken breast
1/2 lb spicy(or Mild)sausage
2 green peppers, halved and seeded
1 red Bell pepper, halved and seeded
2 very ripe peaches, cubed
1/2 cup shredded romano cheese
1/2 cup grated asiago cheese
1 Bermuda onion, sliced thick
2/3 cup Olive oil
1/2 cup Balsamic Vinegar
3 pinches ground Thyme
salt and pepper to taste
How To Prepare:
prepare chicken and sausage with salt and pepper to all sides; prepare peppers and onion by coating in olive oil, reserve remainder of oil for marinade; prepare marinade by combining oil,thyme, vinegar and peaches in a large mixing bowl, set aside.
On a very hot grill, sear the chicken and sausage until cooked, set aside to cool part of grill; apply same cooking technique to the peppers and onions until the vegetables are blackened and soft; remove all meat and vegetables from grill.
Cut all meat and vegetables into bite size pieces, place in mixing bowl with marinade, add cheeses, toss generously, serve immediately.
Excellent summertime grilling choice...the mix of sweet peaches and onions with the vinegar is a real taste explosion that teases your taste buds!
