Ingredients: 2 T butter
˝ c mushrooms, sliced
2 scallions, diced
2 cloves garlic, pressed
1 pound fresh spinach, well washed and chopped

2 T sour cream
2 T freshly grated Parmesan
Salt and freshly ground black pepper
Freshly ground nutmeg
How To Prepare: 1. Melt the butter in a nonstick skillet over medium heat. Add the mushrooms and saute for 5 minutes. Add the scallions and saute for another 3 minutes. Add the garlic and stir well.

2. Add as much spinach as the skillet will hold. Cover and steam to reduce the bulk of the spinach, continually adding more until all of the
spinach has been wilted down. Uncover and saute, stirring, until most or all of the liquid has evaporated and the spinach is greatly reduced but still very green, about 10 minutes. Stir in the sour cream and
Parmesan. Season to taste with the salt, pepper and nutmeg. Serve immediately.

Oh my gosh! This recipe is the best! My mother made it for my birthday dinner and everyone loved it. You have to try it.
