Plan to boil as many eggs as you can personally eat at one sitting, and then add 10 more. You will be sorry if you don't. Boil til done, at least 10 minutes. Make sure to run eggs under cold water for a while, as it makes peeling them much easier.Cut peeled hard boiled eggs in half, dropping the yolks into a bowl, and laying out the whites on a platter.Add mayo to the yolks. You decide how much to add, aiming for the right consistency. I usually add as much mayo as I have yolks, a 1:1 ratio.Add one packet of Spenda (yellow packet). Taste. I usually add one packet per 8 eggs, but I am very sensitive to sweet. You might want to add a little more or less. It is up to you.Stir in chopped bacon. Give two shakes of cayenne to the mix, more if you like a little heat. If you have one of those fancy egg-filler-cake-decorator thingies, go for it. My preferred method of yolk re-insertion is either a zip-lock or sandwich baggie. Fill your squirter with as much as you can, cut of a small corner, and fill egg-white cavities. The last touch is to sprinkle/shake either a little more cayenne, a little paprika, or a combination of the two onto the filled eggs. It makes them look pretty, and everyone really expects it anyway.
