Ingredients: 8 Tilapia Fillets
1 can Rotel Tomatoes, original
1/2 cup diced onion
1/2 cup diced green peppers
4 Tblsp sliced green olives
1/4 cup chopped cilantro
1 lemon, sliced in 8 rings
Old Bay Seasoning
Salt and Pepper
1 Tblsp Extra Virgin Olive Oil
How To Prepare: Preheat oven to 400 degrees. In 13x9 pan, mix tomatoes, onion, green pepper, green olives, cilantro, olive oil and salt and pepper to taste. Place tilapia fillets on top of mixture and sprinkle with Old Bay seasoning. Top each fillet with a lemon slice and bake in oven for 15-20 minutes or until fish is no longer opaque.

This dish is AMAZING! The Rotel tomatoes and Old Bay add just the right amount of kick to this dish. This is so easy to make, tastes so good, and is so elegant that I serve this for guests I wish to impress. I am also serving this dish at a wedding I am catering...it is THAT good!!! ENJOY!

Thank you so much for the recipe. I have been looking for a new recipe for fish. I normally grill it. I used Mahi Mahi and it was beautiful. My DH and I raved about the taste the whole time we were eating it. Great job and I will have this again and again... This is a keeper.

This recipe is a keeper! I made a few changes though, I omitted the olives as no one in my household cares for them and I didn't have Old Bay Seasoning so I used Lawry's Season Salt. Other than that I followed the recipe as printed and it was delicious. I will be making this again!
