Preheat oven to 325, and spray a springform pan with nonstick spray.
Beat cream cheese, vanilla, vanilla syrup, almond flour, and Splenda until fluffy, scraping bowl often.
Beat in the eggs ONE at a time, beating very slowly, only until incorporated, and NO MORE.
Scrape sides, and then fold in sour cream. Put in springform pan. Bake for about an hour, but turn oven off when there is a "dime-sized" wet spot left in the middle. Let sit in oven for half hour, then let sit in room temp until cooled, then refrigerate.
