2 egg whites
pinch of Cream of Tartar
1/2 tsp coconut flavoring
1/2 cup Splenda
1/2 cup shredded unsweetened cocoonut
How To Prepare:
With a mixer, beat egg whites, cream of tartar, flavoring and Splenda together until soft peaks form. Fold in coconut. Drop by teaspoonsful onto a parchment paper-lined cookie sheet. (They don't spread out when baking, so you can put them close together.) Bake at 275 for 1 hour, then turn oven off and let cookies cool several hours in the oven. Remove from paper and store tightly covered.
