3-4 slices bacon, xtra bacon grease
3 cups fresh spinach
1/4 cup crumbled feta, gorgonzola or blue cheese
2 hard boiled eggs, chopped
1/2 c. sliced mushrooms
Vinegar, cider or balsamic
How To Prepare:
Tear spinach in a bowl. Top with cheese and egg. Fry bacon, drain on paper towel, crumble and add to salad. Fry sliced mushrooms in the grease, add to salad. Pour bacon grease into a sauce pan. You need about 2-3 TBsp. If you need more bacon grease, add a little more. Heat, add 2 tbsp vinegar. Add about 2 tbsp water. Add splenda to taste (should be sweet) Thicken with about 1 tsp xanthan, whisking briskly. pour dressing over salad and mix.
