Ingredients: 1 (8oz) can of sliced bamboo shoots,( you must tenderize these before using. You can either boil them or steam them, but they need to be soft and tender.)

1 cup crushed pork rinds

salt and pepper to taste
1 8(oz)block sharp cheddar cheese, shredded

1 8(oz.) block extra-sharp cheddar cheese, shredded

6 large eggs, lightly beaten

4 cups cream
How To Prepare: 1 Tenderize the slicedbamboo shoots until they are soft and tender, then drain.

2.In large bowl, lightly beat eggs, add cream and mix well.

3. Add drained bamboo shoots and crushed pork rinds, mix well.

4. Add cheeses and mix.

5. Grease large 9x13 pyrex.
Pour mixture in and bake at 350 degrees for 1 hour.

6. Let stand 15 mins.

*This recipe makes 8 generous servings so you may want to make just half of it. I make it all and freeze the left over portions in individual servings for later.

Positive aspects of the product (pros): very filling, quick and fairly simple
Cons: you definately have to soften the bamboo shoots alot

This is a great recipe. Full of taste. But when making it, definately make sure you soften the bamboo shoots plenty. I boiled mine, but just not QUITE enough. Next time I make it, they will cook just alittle longer. Also, when shopping for the ingredients, I debated also trying bean sprouts for a something different(not sure the carbs in bean sprouts).

Cons: Not Like Mac n Cheese

I'm sorry for the low review. I made this last night. I followed the recipe with a few modifications. 1. I used an extra can of bamboo shoots because 1 can didn't seem like enough and 2. I used spicey flavored pork rinds. What I thought would be a nice substitute for mac-n-cheese turned out to be a giant baked cheese omlette with wattery bamboo shoots that created puddles in my bowl. Did I do something wrong? Did I add too many bamboo shoots? I don't understand. I was under the impression that the bamboo shoots would act like pasta and incorporate into the cheese sauce. But this wasn't the case. They just stayed the same. let me know if I did something not right? Is it supposed to come out like a baked egg dish?
