3 cloves garlic, minced
1 Tbl lemon juice
1 small yellow squash, cut lengthwise 1/8" thick
1 small zucchini, cut lengthwise 1/8" thick
1 red onion, sliced in rings
1 cup sliced red bell pepper
1/2 cup crumbled feta cheese
olive oil (enough to brush on veggies)
Foil throw-away pan
How To Prepare:
1. In a small bowl, combine mayonnaise, minced garlic, and lemon juice. Set sauce aside in regriderator.
2. Preheat grill for high heat.
3. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell pepper and zucchini close to the middle of the grill and set onion and squash around them. Cook for about 3 minutes, turn and cook for another 3 minutes. The pepper may take a bit longer. Remove from grill and set aside.
(If veggies fall through grill, you can place in the foil pan and cook that way)
4. When veggies are tender, place them in the foil pan, keep on low grill. Add the mayo sauce and stir to coat. Add the feta cheese, stir. Cover grill to warm/melt cheese.
