Description:
Ingredients: 2 medium eggplants
2 ribs celery
1/2 stick butter
1/8 tsp. hot sauce
1 cup ripe olives, chopped


1 cup ground ham, or chopped shrimp, or crab meat
1 large green bell pepper
1 chopped onion
1 Tbsp. worcestershire sauce
1 cup sharp cheddar cheese, grated
seasoned Italian low-carb bread crumbs/optional
How To Prepare: Cook eggplant, peeled and sliced, until tender. Saute'
celery, onion, and bell pepper in butter. Add cooked eggplant, Worcestershire and hot sauce and stir. Add cheese, olives, and meat.
(Taste to see if salty enough.)Put in greased baking dish and cover with seasoned crumbs and dot with butter.
Bake for about 30 mins. at 375 degree oven.
Number of Servings: 6 generous servings
Preparation Time: 20 mins

Cons: no carb count!

I need the carb count! Many of the recipes don't have one so I don't even try them though they may actually be very good and low in carbs.
