4 cups cubed cooked chicken
2 cups chopped celery
4 hard-boiled eggs, chopped
2 cans (4oz.each) mushrooms
2 cans chopped water chestnuts
1 can pimentos
1 cup slivered almonds
2 cups shredded cheddar cheese
1 small onion, chopped
1 cup mayonnaise
1 can cream of mushroom soup
3 Tbsp. lemon juice
How To Prepare:
Mix mayo, soup, and lemon juice in separate bowl. Add this mixture to all other ingredients in a large casserole dish. Bake at 350 degrees for approx. 45 mins.
Top with extra cheese and/or almonds if desired.
This can be made a day ahead and refrigerated until time to bake. It freezes and reheats well. I usually make and freeze in individual portions for a quick meal.
