Description: Moroccan Kebabs, or Kefta as it is called in Morocco. They are very tasty and eaten mainly with Moroccan bread that is like a thick version of pita bread but can also be eaten without bread and served with some veggies to keep it low carb. You can also pan fry them without the skewers. This recipe can also be made with chicken, turkey, steak or lamb.
Ingredients: 2 lbs Ground Beef, 1 Medium Onion Chopped, 2 Cloves Garlic Minced, 1 Tbs. Chopped Fresh Curly Parsley, 1 Tbs. Chopped Fresh Cilantro, 1 tsp Paprika, 1 Tbs Cumin, 1/2 tsp Salt, 1/2 tsp Black Pepper, 1/2 tsp Cayenne Pepper, Skewers
How To Prepare: If using wooden skewers, soak in water. Combine the beef, onion, parsley, cilantro and spices in a large bowl. Refrigerate for 1 hour. Wash your hands but do not dry them. Gently pack small amounts of the meat mixture around the skewer, forming a 4 inch sausage shape on each skewer. Grill over medium heat (preferably using charcoal) until cooked through. You can also pan fry these without the skewers if you would like over med heat.
Number of Servings: Makes about 12 skewers, Serves about 6 people

Positive aspects of the product (pros): Easy and different
Cons:

This is very easy and a wonderful change of pace. It got rave reviews from everyone in my house but I will admit that we are very open minded to foreign flavors and always eager to try something new. I served this wrapped in a 5g carb wheat wrap with feta crumbles, cucumber slices, onion and a bit of tzatziki sauce (this is the sauce that comes with a gyro). If you would like to avoid the carbs from the wrap I thought it was absolutely delicious on its own! I did not bother to skewer them as the weather didn't permit outdoor grilling the day I made them. They just wound up in a skillet on the stove top but I cant wait to grill them over charcoal! One more thing...this recipe will work really well with ground turkey, lamb or beef or any mixture of them.
