Description: Truffle \ˈtrə-fəl\ - according to Webster: a candy made of chocolate, butter, sugar, and sometimes liqueur shaped into balls and often coated with cocoa. So these are technically not a truffle (because of no cocoa), but it's a fun word, and a easy delicious treat!
Ingredients: 1 – 8 ounce block of cream cheese, brought to room temperature; ˝ cup powdered sweetener (I use sugar free powdered Ideal); 2 teaspoons of coconut extract; ˝ cup shredded coconut (I use unsweetened)
How To Prepare: Mix first three ingredients in a large mixing bowl. Scoop out a portion with a teaspoon and after sprinkling some coconut on your hands roll into a ball, and roll into the coconut. Put into a small paper baking cup and refrigerate.
