Description: Creamy, Cheesy, Chunky and very satisfying! This recipie was created by "Big L"- my momma, an amazing cook!
Ingredients: 1 Medium Head Cauliflower, Two 14oz Cans of Chicken Broth, 4 oz. Cream Cheese, 1/2 Cup Heavy Cream, 8oz. Grated Sharp Cheddar, 1 Tablespoon Dry Parsley, 1/4 Teaspoon Pepper, 6 Teaspoons Parmesan Cheese for Garnish.
How To Prepare: Boil cauliflower in the chicken broth until soft- approx. 15 mins., Mash cauliflower in broth with wisk to small bits, Lower heat to simmer, Add cream cheese, heavy cream, grated sharp cheddar, parsley & pepper. Mix all ingredients with spoon until melted and blended. Let soup cool to thicken. Serve with 1 teaspoon parmesan cheese on top. Sodium can be reduced by using low sodium/sodium free chicken broth.
