Fried Rutabagas, squash, and onions. This is a LC version of fried potatoes, squash, and onions which was very popular when I was a restaurant cook.
olive oil or bacon grease, small rutabaga, medium onion, 2 medium summer squash
How To Prepare:
Peel rutabaga and slice thinly. Cut onion into thick slices. Slice squash into thick slices. Sautee rutaabaga slices in oil and /or bacon grease until slices become slightly translucent, stirring occasionallly. Add Squash and onion to skillet, continuing to stir. Add oil if needed. Salt and pepper to taste. Serve when squash is bite tender and onion is translucent.
