All my kids LOVED this. The whole family enjoyed this recipe and some didn't know it was cauliflower until told what it was, they thought it was potatoes. They really like the Hidden Valley Ranch flavor too.
1 head cauliflower, washed and broken into florets (about 4 cups florets), 1 cup Hidden Valley® The Original Ranch® Dressing Light, 1 tablespoon fat-free milk, 1 tablespoon light margarine (tub-style) or butter, ¼ teaspoon salt
How To Prepare:
Place cauliflower florets into a steamer and cook for about 20 minutes or until tender.Transfer the cauliflower to a food processor. Add Hidden Valley® The Original Ranch® Dressing Light, milk and margarine to the cauliflower and blend until the mixture reaches the consistency of mashed potatoeAdd salt, mix and serve.s.
