1 cup flax seeds, 1/4 cup sunflower seeds, 3 eggs, pinch of salt, 1 tsp vanilla extract, 1 tsp liquid sweetner (equivalent of 50g sugar), 1/4 cup coconut flour, 1/4 cup oil, 1 tsp baking powder, 2 tbsp water
How To Prepare:
Blend sunflower seeds and flax to meal. Beat eggs with vanilla, salt, oil, sweetner and water. Add coconut flour and flax/sunflower meal and baking powder. Mix thoroughly. Bake in muffin/cupcake cups at 175C/350F for 20-25 or until toothpick comes out clean. As a variation - either add 2 tbsp cocoa powder to whole recipe or 1 tbsp to half recipe for a chocolatey alternative.
