Beat egg, add cream, vanilla and syrup and mix. Add flax, baking powder, and cinnamon and mix well. Heat a frying pan over medium heat. When hot, melt 1 tsp coconut oil in the center. Pour half the batter into the hot oil and fry until edges are beginning to dry and bubbles appear on top. Flip and fry until golden and done, about 1 minute. Remove pancake to a plate. Repeat with second tsp of coconut oil and remaining batter. Serve with butter and sugar-free pancake syrup.
