Description: These are some of my favorite low-carb and gluten/grain free pancakes:

4 eggs
4 Tbsp Coconut flour
1 Quite ripe banana (optional)

Mash the banana if you decide to use one and mix with eggs and coconut flour. I use a hand mixer to mix it well.

Cook on low-medium heat to desired level. Unless you have a large spatula or "flipper" keep the pancakes small for ease of flipping.

I like to top with fruit like blueberries and raspberries. This makes enough to serve two-three people.
Ingredients: Coconut flour, eggs, banana (optional)
How To Prepare: Mash banana and mix throughly with coconut flour and eggs. Grease skillet and cook to golden brown.
Number of Servings: 2-3 people
Carbs per serving - include all nutritional information if known: ~25grams
Preparation Time: 10-25 minutes
