Gorgonzola Cauliflower Salad
|

Ingredients:
|
1/3 lb. bacon, fried crisp, medium head of cauliflower (mine was a little over 1#), 1/4 cup finely chopped white onions, 1/2 cup finely choppd celery, 1/2 cup chopped walnuts and equal parts mayonnaise, sour cream and crumbly Gorgonzola with salt and pepper to taste (I used 1/2 tsp. each)

How To Prepare:

Crumble the bacon and set aside. Pull off the leave and remove the hard inner core of the cauliflower. Chop into bite-sized pieces and cook in small batches in the microwave. Four minutes with a small amount of water rendered a tender, cooked vegetable in my 900 watt oven. Mix equal part of the mayonnaise, sour cream and Gorgonzola together. Add salt and pepper to taste. Add the crumbled bacon, onions and celery, and walnuts to the mayonnaise mixture. Add the cooled cauliflower and fold all the ingredients together until well mixed. Chill until ready to eat.

Average. Originally, made with potatoes, but Cauliflower comes in very easily and doesn't really taste that much different. I used Best Foods Light Mayonnaise b/c that is all I had in the house, and a milder Gorgonzola cheese, per my preference.
