Spread a little olive oil on the bottom of a casserole dish. Line the bottom of the dish with uncooked shrimp. Top with a tablespoon of minced fresh garlic.. Top with a small tomato, seeded and diced. Add a teaspoon of capers and a teaspoon of oregano, season with fresh ground pepper, and drizzle on some olive oil. Place into a 350 degree oven for 25 minutes. Top with feta cheese and cook for another 5 minutes. Server over cauliflower "rice".
Number of Servings:
1 or 2 depending on how many shrimp you use.
