2 tblsp olive oil
6 chicken drumsticks
2 part-boned chicken breats,
4 Spanish chorizo sausages,
1 small chopped onion
2 cloves garlic, crushed
12 shallots, peeled
14 oz can tomatoes
2 tblsp tomato puree
3 tomatoes, peeled, deseeded and diced
300ml/1 1/4 cups white wine
1 large yellow pepper, sliced
2 tblsp parsley
1 tsp dried marjoram
How To Prepare:
Brown chicken and chorizo in olive oil and set aside.
Add onion pepper and garlic and fry until softened. Add shallots and fry further 5 minutes then add canned tomatoes, tomato puree and wine.
Season with salt and black pepper. Simmer for 10 mins then add chicken and marjoram. Cover and simmer 30-35 mins. Now add tomatoes and chorizo and simmer uncovered for about another 10 mins until sauce thickens slightly then garnish with parsley.
