Breakfast Tortas. You can also add a scrambled egg!
3 Pieces of Bacon, 1 tsp of drippings or canola oil, 1 Low Carb Tortilla, 2 tbls Queso Fresco Cheese, 1/2 tps Sriacha (or hot sauce), 1 tbls Mayonnaise, 3 slices of Tomato, 1 leaf of Lettuce julienned
How To Prepare:
Fry the bacon. In another pan, add the tsp of dripping - get it hot. Put the tortilla in it and swirl it around so it acquires the dripipings. Fry it for about 2 minutes or until it starts to puff slightly and turn golden. Turn it over. Add the queso fresco (it is a Mexican cheese - slightly salty and SO good - let it melt for a minute. Queso Fresco does not melt completely. Take off the heat when the other side is brown (about 1 - 1 1/2 minutes). Add the bacon, crumbled, the tomatoes and the strips of lettuce. Combine the sriacha and mayo, drizzle over the torta. Serve!
