Description:

Cream cheese and Blackberry bars
|

Ingredients:
|
4 oz cream cheese
1/2 stick butter
1/2 cup coconut flour
1/4 cup splenda
1 1/4 tsp vanilla extract
(I use coconut oil to grease pan)
1/2 cup blackberries
3 tsp pectin
3 TBLS (equal parts water and splenda)

How To Prepare:

Make the blackberry jam first because you'll need to refridgerate it for 1 hour. Over med-high heat mash up 1/2 cup blackberries, add splenda water, and pectin- bring to a boil and then put in the fridge for 1 hour.
When the blackberry jam is cooled, Heat oven to 350. (I do 325 for 20 min because I have a hot oven) Mix together the softened cream cheese, butter until creamy. Add the eggs and vanilla. Add the coconut flour and blend until mixed. Spoon mix into a 8x8 greased pan, and add the blackberry mix to the top (it's jam so you'll need to spread it across).
Put in the oven for 20-30 min, check with tooth pick to see if it comes out clean. Cool and serve.
