This is a delicous version of Mash Potatoes. What's funny about it is that I am NOT a fan of cauliflower. But I "LOVE" this item.. Believe me.. It's good. Even my children eat it and askes for me to make it often and they don't lowcarb..

Ingredients:
2 heads of cauliflower
1 pkg of Philly Creme Cheese
1/4 stick of real butter
pkg of bacon
shredded cheese
salt & pepper

How To Prepare:

Cut the caulifower up and put it in a deep pan. fill up the pan with water (submerge cauliflower completely) Boil the cauliflower until you can break it apart with a fork. Drain the cauliflower completely and before it cools off take your mixer and beat the cauliflower until it is creamy. While beating it add your philly creme cheese and butter. Blend. Add some salt and a BUNCH of pepper.
When it is completely blended empty it into a glass or metal rectangular bowl.
Sprinkle the shredded cheese on top.
Oh... the bacon: cook the bacon and break it apart and put it over the top of the cheese.
NOW: stick the bowl into the oven (at 275 degrees) and leave it in there until the cheese melts.
OHH it is soo good and even good as leftovers.
