1 chicken breast
1/4 cup mushrooms
1 oz montery jack or swiss cheese
How To Prepare:
I MAKE FOR LUNCHES
Pound chicken to ensure equal thickness, marinate in soysauce (couple of tablespoons)
Fry, grill, bake (I use a George Forman Grill)
Fry the mushrooms in a little oil until lightly brown.
place cooked mushrooms ontop of cooked chicken topping off with the cheese -- melt.
Best if frozen prior to melting cheese. Reheat in microwave -- mushrooms release their juices as the cheese melts providing a nice gravy.
