-4 skinless-boneless chicken breasts
-4oz softened cream cheese
-1 package frozen spinach
-1 cup pepper jack cheese
-1 cup parmisan or ramano cheese
-2 beaten eggs
-1-2 cups ground bacon rinds
How To Prepare:
Drain and squeeze thawed spinach in paper towel. Mix cream cheese, spinach, pepper jack and 1/2 the parm/romano into paste. Pound out chicken til 1/4"thick and even(pound it inside an open freezer bag to prevent big mess).Spread paste evenly and roll up. Let sit in fridge for twenty minutes to tighten up. Mix bacon rinds and remaining parm/ramano, dip in egg, roll in rind mixture. Place on greased baking dish and cook in a pre-heated 375' oven for 35 minutes.
