Ingredients: 2 lb. eggplant cut in 1/8" lengthwise slices, peeled

Breading Mix:
1 oz. romano cheese
3 eggs

1 cup chopped spinach, (if using frozen, thaw and wring out water)
1+ cup tomato sauce(thinned puree), save some for top
1 egg
6oz. mozzarella cheese
1/4 t. salt
3/4 oz. romano cheese
1 cup ricotta cheese
How To Prepare: Flour the eggplant slices(almond flour) and dip in breading mix. Spread 1 cup
tomato sauce in long casserole dish. Fill eggplant slices with filling mixture and then roll them up. Place in casserole dish.
Top with mozzarella cheese and tomato sauce. Bake at 350 oven for 45 mins.
Number of Servings: 6 - 8 servings
Preparation Time: 20mins
