Description: Ok, so after cking out several diff "mac + cheese" versions on the site, I came up w/ my own casserole base and it's super yummy-- couldn't eat it fast enough!!!

You can use your favorite low-carb "pasta" if you enjoy the taste and texture when baked (although I DO NOT recommend Dreamfields as when cooked past al dente can spike BGL and cause very slow Ketosis. Bad!!)

FRESH broccoli is my favorite *core* ingredient Smile
Ingredients: 1 med head of broccoli or other low carb veggies, OR your fave low-carb pasta (PLEASE READ NOTES ABOVE about pasta!!!)

1 xtra large egg
2 TBSP Heavy Cream, divided
1-1/2 TBSP Butter
1 c. fave shredded cheeses
1/2 c. cubed cheddar cheese
1 oz. Cream cheese or The Laughing Cow
1/2 c. Crushed pork rinds

4oz. fresh Mozzarella
1/2 c. Crushed pork rinds

Hamburger (cooked and drained)
Grilled chicken (don't overcook!)
Chopped fresh Jalepeno
Taco seasoning (check carbs)
Polish Sausage/Kilbasa
How To Prepare: Pre-heat oven to 375'

FOR LOW-CARB PASTA: Prepare "pasta" according to package directions. Drain well then return to pot w/ the burner off.

FOR OTHER CORE INGREDIENT, such as broccoli or cauliflower: Simply chop up into florets and put uncooked vegetable in casserole dish. Set aside. If using frozen veggies, thaw and drain 1st.

1. Beat egg + one TBSP heavy cream and S+P in bowl w/ a fork til just blended. Set aside.
2. Turn burner onto VERY LOW HEAT, and in a non-stick saucepan blend all shredded cheeses, cream cheese, butter and 1 TBSP cream.
3. Once cheeses begin melting, add in egg mixture and continue mixing til ingredients are smooth and blended. No need to overblend, and attempt not to "cook" the egg. Remove from heat.
4. Blend in in 1/2 c. crushed pork rinds and cubed cheddar, then transfer to your casserole dish (I used a deep porcelain casserole dish, 8" in diameter).
5. Gently blend all ingredients, cover w/ mozzarella, then evenly top w/ remaining crushed pork rinds.
6. Cover w/ foil and cook at 375' for 15 minutes, then remove foil and increase heat to 450' & cook for another 10-15 minutes.

Ready to serve immediately!!! NOT GREASY AT ALL!!
