Description:

This is an adapted cookie from one Comedian CArl Reiner called his "f88kin" good cookies. These are GOOD, and quite low carb, no joke!
Here is the original:
4 oz cream cheese
1/2 cup butter
1 cup flour
9 tbsp sugar
3 tbsp ground nuts
My update is below, feel free to tweek it and post your results

Ingredients:
|
Here is my adapted take:
1 package softened cream cheese
1 Stick Butter (Must be butter)
2 tsp vanilla (or sugar free syrup)
1 cup finely ground almonds
4 Tbsp baking mix or 1/2 cup almond flour
Splenda to taste
I use about 9 packs
1 cup unsweet coconut
Mix together and drop by tbsp full on to ungreased sheet, leave space for cookie 3 in a row is good. Bring pan to sink, turn on cold water and get a few drops on your fingers at a time, flatten with wet fingers and swirl in a circle motion onto pan until cookies are round and quite thin.
You can sprinkle nuts on top at this point or add a tiny bit of unsweeten jam, jazz them up many ways
They are a bit delicate but yummy. You may have to add more sweet to taste, tweek it abit, but it is a great cookie!
