1 cup Davinci’s Sugar-free Raspberry syrup
½ cup fresh raspberries
How To Prepare:
Add Davinci’s syrup to a pot and bring to a boil. Reduce volume by approximately half. While reducing, zest the rind of the lemon. Add half (or all) of the lemon zest to the syrup. Squeeze the juice from the lemon into the syrup. When syrup is reduced add the fresh raspberries and stir to break up. Allow mixture to cool slightly. Add xantham gum to thicken further (start with ¼ teaspoon and add more if necessary). It may be necessary to use a whisk or beaters to break up the xanthan gum.
Pour directly over whole chicken or duck during last 15-20 minutes of cooking (Adding more xanthan gum will keep the glaze from sliding off). Adding it too early could cause it to burn.
Or pour over sliced chicken or duck. It's also surprisingly good as a dessert!
